
I love making shrimp skewers because Michelle can get put to work in the cooking process. She’s pretty good on the grill, which is helpful when I have a million other little things happening in the kitchen.
I have had different versions of these shrimp skewers for years and years. Always has the same ingredients, more or less… however, I had somewhat of an aha moment the other day blending all the ingredients for the marinade together. Not sure why I had not thought of that before. Oh well, glad I did now cause I think the recipe works best this way.
Recipe Supplies:
- Shrimp (The bigger the better. Devein and peel. If you want to be fancypants leave the tails on)
- Cilantro
- Lime
- Lemon
- Garlic
- Cayenne
- Red Chili Flakes
- Honey
- Garlic & Onion Powder
- Salt & Pepper
- EVOO
Play around with the portions. You can’t really fuck this one up. I do, however, use a fair amount of cayenne & chili flakes in this… I like the shrimp having a little kick.
Blend all the ingredients in a blender. Or if you are me, a ninja because you don’t have room for a big-ass blender. Use a decent amount of oil and citrus in the mix so that it has the consistency of a sauce when blended. Make sure you taste it and season accordingly if you need to make any adjustments.
I taste what I am cooking so much that I usually don’t eat much when it is done. I’ve been tasting the damn thing all day. By the time I’m finished, I am ready for something new. But seriously, I think the majority of the food I eat out is under-seasoned. It makes such a big difference and can turn a pretty good dish into something way better.
Okay, now that your marinade is done, you want to mix the shrimp with it in a bowl. Make sure all the shrimp get coated in the sauce. Cover and put in the frig for at least an hour or so.
Once it has had time to marinate, skewer the shrimp and let them sit out a little bit to warm up. I don’t like putting super cold shrimp from the frig right on the grill. I feel like they cook better if they are a little warmer.
Preheat your grill and get it nice and hot. Coat with oil (I have some EVOO spray I like to use). Then, cook the shrimp for about a minute or so (depending on how big they are) on each side. Do not overcook them! Remember what skewer you put on the grill first and flip them in that order. First, skewer down = First off the grill.

Squeeze some lime on them, and you are done! Throw them in your favorite tacos, salad, or just by themselves!
